About the role
This executive chef interview goes beyond cooking technique into culinary direction, leadership, food safety and financial control. The panel is looking for someone who can shape a credible menu, build a strong brigade and deliver consistent food across routine service and high-volume functions.
How to prepare
- Prepare to explain how you develop, test, cost and launch a menu.
- Review your controls for purchasing, yield, portions, waste and stock movement.
- Think through a serious refrigeration or food safety incident from discovery to follow-up.
- Prepare an example of developing senior chefs and addressing damaging kitchen behaviour.
- Review how you assess the capacity and service risks of a proposed event menu.
Common mistakes
- Focusing on personal cooking skill while saying little about leading other chefs.
- Suggesting menu changes without considering equipment, labour, service and food cost.
- Giving vague assurances about food safety instead of describing checks and records.
- Accepting an event menu before testing production and service capacity.
