About the role
This interview tests precision and judgement across restaurant pastry, bakery production and special orders. The panel will look for sound technical diagnosis, realistic batch planning, safe allergen and storage practice and awareness of yield, waste and presentation.
How to prepare
- Select portfolio examples that show consistent batches, clean finishing and more than one pastry technique.
- Review the purpose of key ingredients and how temperature or humidity affects doughs, creams and chocolate.
- Practise building a production schedule backwards from service and collection times.
- Prepare an example of tracing a failed batch to its cause and preventing recurrence.
- Be ready to explain yield, portion cost and useful ways to reduce trim and spoilage.
Common mistakes
- Showing attractive finishes without explaining the technique and production process behind them.
- Treating ingredient substitution as harmless without checking structure and allergens.
- Giving vague quantities or timings when discussing a repeatable recipe.
- Ignoring holding conditions and shelf life after a product leaves the pastry section.
